Melissa Cookston, the only female barbecue champion in the world, has shared a tangy, spicy recipe for grilled ginger salmon with us from her cookbook Smokin’ in the Boys’ Room. It’s an easy dinner to make as long as you marinate the fish and make the sauce ahead of time. Serve with rice and grilled vegetables.
This grilled ginger salmon features:
4 salmon fillets
pineapple juice
fresh ginger
chipotle chiles
soy sauce
What you’ll need to do:
Marinate the salmon and make the sauce ahead of time—the morning of would be best but you can do so the night before. Once you’re ready to make dinner, cooking the salmon will only take 6-8 minutes. If you don’t have a grill, you can use a grill pan on the stove, perhaps this cast-iron grill pan from Lodge.
