Who knew a pork pun could be so sublime? Order the one at Momofuku Ssam, my favorite of the Momofuku trio (noodle bar and ko are the other two, plus the bakery/milk bar next door to Ssam), and you may never again eat the cheaper, greasier versions. This is a pork bun like no other, with slightly crisped pork belly, slivers of pickled cucumber, scallions, a sweet sauce, all layered in a soft bun—it’s a must-have dish.
