Sushi by Chef Tracy Griffith

The Cowboy Roll
The Cowboy Roll
I am at Dean & Deluca biting into sushi. The Cowboy Roll is unlike any roll I’ve tasted. This version contains meat, skirt steak with slivered red onion, triple cream blue cheese, and jalapeno soy sauce. It’s like biting into a morsel of a very appealing dinner. This is absolutely not typical sushi with raw fish and seaweed, and it’s definitely not Japanese. Filled with such ingredients as Berkshire bacon, steamed Maine lobster and cheddar cheese, these rolls are all-American, and I am on board with this newfangled translation.

Friends are often shocked when I tell them I don’t like sushi. I will eat it, but I never crave it and it’s definitely not at the top of my food interests. So I was excited to find out about this new line sold at Dean & Deluca because chef Tracy Griffith (sister of Melanie) has created a unique twist with such rolls as Green Goddess (all fresh greens), Lobster Love, Cowboy, BLT (yes, with bacon) and Chicken Run (with basil, mint and chili-garlic peanut crunch). And the wraps aren’t the usual nori but rather vegetable-based, including sweet corn, tomato and carrot.

Whether or not you’re a sushi fan, I’m certain you’ll like Tracy Griffith’s spin that’s taken from her cookbook (below). Available as to-go boxes at Dean & Deluca.
