Chicken galangal coconut soup

This strange looking root resembles ginger in appearance.

Have you ever cooked with galangal? I’d love to hear what you’ve made. I added a few slices of it to this Thai-inspired soup. The galangal, combined with some of the key ingredients—lime, coconut, lemongrass—gave the soup a tangy, fragrant flavor.

  1. I’ve used galangal a few times, but only ever in Thai Chicken Soup. Most of the time I can’t find it, so I use ginger instead. I wonder if galangal could be substituted for ginger in other dishes? I’m going to try that…
